Method

Use 3 cups of cold water and a pinch of salt for every cup of white rice (preferably American long-grain). Before cooking, pour water over the rice and allow to drain.
Place the rice in a saucepan with the salt and 3 cups of cold water, bring to boil and cook until almost soft (about 20 minutes). Place the rice in a colander, rinse in cold water and then steam, covered, over boiling water until it is completely cooked and fluffy.
