Decomposed granite mixed with clay

VINIFICATION

The different cultivars were fermented separately in steel tanks for 7 to 8 days till dry. After malo-lactic fermentation the wines were blended in a ratio of 70% Cabernet Sauvignon, 20% Merlot and 10% Cabernet Franc. Once blended the wine was matured in 300 litre Nevers oak barrels for 18 months- 80% new wood and 20% second-fill casks. After bottling, the wine was further matured for 24 months before release.

TASTING NOTES

Bouquet is typical cassis and plum, with hints of vanilla spice and some cedar wood. A mineral bouquet is starting to develop. On the palate it has a mouth filling bouquet of berry fruit and ripe plums, supported by firm, fine tannins and fresh acidity.
