Decomposed granite mixed with clay
VINIFICATION
After the first fermentation in open steel tanks the wine underwent secondary malo-lactic fermentation. Before barrelling the wine was blended in a ratio of 60% Cab. Sau. 25% Merlot and 15% Cab.Franc. It was then matured for 18 months in new French oak. Followed by two year bottle maturation before release.
TASTING NOTES
Translucent ruby with gradation to tawny rim. Well developed, earthy, slightly organic nose with hints of tobacco and smoked meat. Palate is open with red cherry fruit, balanced acidity and evolved, almost sweet tannins.
